We were honoured to host chef Michel Eyckerman from Belcolade during March 2016. Michel fills the roles of Chocolate Centre Supervisor and of Technical Advisor Patisserie & Chocolate with Belcolade. He has previously won gold medals at Richmont Cup 2014, Les Pellons D’or 2013 and Fonds Arthur Troch 1998.
Michel presented Chocolate Masterclasses at the William Angliss Institute in Melbourne and at the Puratos Innovation Centre in Sydney, attended by chocolatiers, chefs, apprentices and staff.
In Melbourne, Michel was assisted by Filip Tibos from Apromo Melbourne. Michel’s Masterclass showed the latest European trends in chocolate cakes, entremets and even listed the latest popular hype; “street food”, inclusive of Belgian tacos complete with a Venezuelan chocolate dip and Vietnamese chocolate nougat. Filip also combined a tasting of exclusive experimental Vietnamese chocolate and showed an educational video with the latest responsible cultivating and processing of the Vietnamese chocolate developments taking place at Puratos Grand Place, Vietnam. The event was rounded off by a popular and lengthy question time and sampling of the prepared Belcolade delicacies.
While in Melbourne, Michel also provided one to one classes with customers to provide further training in topics such as; cryst-o-fil applications, how to colour moulded chocolates and the secrets in creating easy chocolate showpieces for shop windows and buffets. Similarly while in Sydney, Michel conducted classes in client premises. These visits were professional development opportunities for chefs and other Apromo Trading clients working with chocolate.
